A couple of sprigs of fresh rosemary, a handful of garlic cloves, butter, vegetable stock, and, of course, potatoes. We suggest Yukon gold potatoes for this recipe because they will always provide the perfect texture and flavor for each bite after all is said and done.

After you have gathered your ingredients, begin by washing, peeling, and cutting the potatoes into rounds. Bake the potatoes in a preheated oven for about fifteen minutes, then remove to turn the potatoes. Once they have been flipped, place them back into the oven to roast for an additional fifteen minutes.

Pour the vegetable stock into the pan and place the garlic cloves strategically around the potatoes. Tender, crisp, and packed with the extravagant flavors of rosemary and garlic, these melting potatoes are the perfect addition to any dinner and will result in an irresistible meal every time!

Ingredients

  • 4 Tablespoons unsalted butter, melted
  • 2 teaspoons fresh rosemary leaves, chopped 
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 pounds yukon gold potatoes, peeled and cut into 1-inch slices
  • 1 cup vegetable stock
  • 3 to 4 garlic cloves, peeled and smashed

Directions

  1. Heat oven to 450ºF.
  2. In a large bowl, combine rosemary, salt, pepper, and melted butter. Add the sliced potatoes to the bowl and use a spoon to mix and ensure they are evenly coated. 
  3. Pour the coated potato slices onto a baking sheet and top with any remaining butter mixture from the bowl. 
  4. Roast the potatoes in the oven for 30 minutes, turning the potatoes halfway through so that the potatoes are crisp. 
  5. After roasting, remove from the oven. Add the vegetable stock to the pan and place the garlic gloves all around the pan. Place the potatoes back into the oven and roast for an additional 15 minutes.
  6. Check that the potatoes are tender before removing from the oven and serve hot alongside the garlic and oil leftover from the baking pan.
