3 Easy Desserts to Make at Home

Sit back, relax, and enjoy the sweet escape that comes with the decadent flavors of these simple treats! This week, we’re covering how to make dessert convenient with recipes for old-fashioned banana pudding, cozy chocolate chip mug cookies, and even mocha popsicles!

1. Banana Pudding

This homemade banana pudding recipe features creamy vanilla custard with fresh banana slices, topped with a buttery cookie crumble. It can be made in only a few minutes and is perfect for crowds or a light snack! 

Ingredients

Directions

  1. Begin by adding the milk and pudding mix to a bowl, using a hand mixer to combine until fluffy. 
  2. Next, create the custard in a separate and large bowl by combining the softened cream cheese and condensed milk. Mix until smooth, then fold in the Cool Whip.
  3. Slowly add the pudding to the cream cheese mixture, stirring to combine. 
  4. Set the mixture aside and slice the bananas.
  5. Either crush the Chessman Cookies by hand, or, add to a ziploc bag and crush to minimize the mess, and coat the bottom of a mason jar with the cookie crumbs. Repeat for as many jars as necessary.
  6. Create a layer of banana slices over the crumbled cookies, then top with a few spoonfuls of pudding. Repeat so that there are several layers of cookie, banana, and pudding in each jar. 
  7. Serve immediately or chill until ready to serve. Enjoy!

2. Chocolate Chip Cookie in Mug 

Perfect for college dorm life or to satisfy those late-night sugar cravings, this chocolate chip mug cookie recipe is the coziest treat to try this autumn! 

Ingredients

  • 1 Tablespoon butter, unsalted
  • 1 Tablespoon sugar
  • 1 Tablespoon brown sugar, firmly packed
  • ½ teaspoon vanilla extract
  • 1 egg yolk
  • 3 Tablespoons flour
  • 1-2 Tablespoons semi-sweet chocolate chips
  • A pinch of salt

Directions

  1. Melt the butter in your mug in 10-second increments to prevent burning. 
  2. Use a spoon to stir in both the white and brown sugar, as well as the vanilla extract and salt until combined. 
  3. Next, stir in the egg yolk and mix well. 
  4. Slowly add the flour to the mug, mixing to combine. Then, use the spoon to fold in the chocolate chips. 
  5. Put the mug in the microwave and cook for 40-50 seconds, checking that the center of the cookie is fully cooked. 
  6. Serve warm or add a scoop of vanilla ice cream and enjoy!

3. Mocha Popsicles 

Remember how much you loved the velvety richness of frozen fudge pops as a kid? This recipe combines the chocolatey sweetness of fudge popsicles with energizing espresso for a mocha dessert so tasty, it’s almost chilling!


 

 


Ingredients

  • 1 cup sugar
  • ¾ cup cocoa powder
  • 2 Tablespoons espresso powder
  • 2 Tablespoons cornstarch
  • ¼ teaspoon salt
  • 3 ½ cups whole milk
  • 1 teaspoon vanilla extract

Directions

  1. Combine the sugar, cocoa powder, cornstarch, and salt in a small bowl and whisk the ingredients together. Then, add the mixture to a large saucepan, as well as 1 cup of milk, but do not put it over heat yet. Continue to whisk until paste forms, then whisk in the remaining milk. 
  2. Place the saucepan to a simmer over medium heat and stir continuously for about 4 minutes as the mixture thickens. 
  3. Remove from heat, stir in the vanilla extract, and continue to stir the mixture for an additional 10 minutes as it cools to prevent any film from forming. 
  4. After it has cooled, pour the chocolate mixture into your popsicle molds and freeze for around 5-6 hours, checking to confirm they have solidified completely. 
  5. Enjoy on their own or pair with the banana pudding recipe shared above!
