Fresh Watermelon Fries 

This take on the traditional summertime fruit is absolutely perfect for cookouts under the summer sun! These juicy watermelon fries are packed with natural sweetness and pair amazingly with some homemade Greek yogurt and lime dip! Plus, they are incredibly easy to prepare!

Ingredients

  • 1 cup Greek Vanilla Yogurt 
  • Zest and juice of 1 lime

Directions

  • In a bowl, combine yogurt, lime juice and zest, stir, and set aside.
  • Slice watermelon and cut into small fries, about ½ thick and 2-3 inches long.
  • On a plate, scatter watermelon fries and sprinkle Tajin classic seasoning.
  • Serve with dip and enjoy!

Golden Griller Squash Sandwich 

Grilled squash isn’t a new thing, but have you ever tried griller squash? It’s a delicious way to expand your flavor palette this summer! Its flavor is reminiscent of fried green tomatoes or grilled zucchini and pairs well with a variety of foods, so why not try it on a sandwich? This recipe will give you crispy, fried squash, but feel free to opt-out of the breading and try it grilled, too!

 

 

Golden griller squash sandwich

Ingredients

  • 4 Slices of your favorite white bread. 
  • Dukes Mayonnaise
  • 1 avocado 
  • Salt and pepper to taste
  • 2 golden griller squash 
  • 1 cup self-rising flour 
  • ½ cup yellow cornmeal 
  • 1 Tablespoon sea salt
  • 1 Tablespoon pepper
  • 1 teaspoon garlic powder 
  • 2 teaspoon of paprika  
  • Vegetable oil 
  • 1 Fry Daddy (you can also 

Directions

  1. Pour vegetable oil to the line in the fry daddy and turn on high. 
  2. Mix the flour, cornmeal, salt, pepper , paprika , and garlic powder in a bowl.
  3. Pour some water into a separate bowl and set aside. Slice grilling squash in ½ inch thick slices and dip the slices into the water, then into the flour mixture and set aside.
  4. When oil is ready, drop the breaded squash into the fryer. Let cook for 3 minutes and then flip over. Fry for another 3 minutes, then pull out and place on a paper towel to drain excess oil. 
  5. While they are cooling, toast your bread, and spread mayonnaise. Then, sprinkle salt and pepper onto the mayo. 
  6. Place the squash on the bread, then place the slices of avocado on top of the squash. Top it with your other slice of bread, and enjoy!

Homemade Peach Ice Cream

Now this has got to be the epitome of homemade summer food in the south. Enjoy all the sweetness this dish has to offer with its perfect blend of creamy, smooth vanilla and fresh, tangy peach. It will definitely be a favorite, so save this recipe so you can make it again!

Ingredients

  • 3 Tablespoons cornstarch
  • 1/4 teaspoon table salt
  • 1 ½ cup of sugar, divided
  • At least 4 cups of milk, divided
  • 6 egg yolks
  • 1 can of sweetened condensed milk
  • 2 Tablespoons vanilla
  • 2 cups of whipping cream
  • Rock salt
  • 10-15 bruised ripe peaches 

Directions

  1. Combine cornstarch, table salt, milk, and 1 cup of sugar in a microwave-safe bowl. Cook in the microwave for about 4 minutes or until the mixture begins to thicken. 
  2. In a small bowl, whisk the 6 eggs yolks well and temper yolks with a spoonful of the hot custard mixture. Then, stir the tempered yolks into the custard mixture and microwave for an additional 2-3 minutes. It should reach the consistency of pudding, at which point you will let cool in the fridge for about an hour. 
  3. Meanwhile, prepare the peaches. Begin by cutting off any bruised or damaged parts and sicarding them. Rough cut the peaches and make sure you have about 1 ½ cups to work with. In a small pot, bring water to a boil. Dissolve ½ cup of sugar in the water and put in peaches. Simmer on medium-low for about 15-20 minutes.
  4. Remove from heat and let cool. Once cooled, drain most of the water (leave a small amount) and liquify in a blender until it reaches the consistency of baby food. Place in fridge until later.
  5. Once cooled, add 1 can of sweetened condensed milk, the vanilla, and whipping cream and mix well. In the ice cream container you plan to use (about the size of a store-bought one) fill about ⅔ with milk (around 2 cups). 
  6. Add the fruit puree to the overall mixture until well-mixed and prepare to make the ice cream. If using a machine, prepare the rock salt and ice and run machine as directed. If making by hand, follow that process. Cover machine with a towel and let ice cream rest or ripen for 30 minutes to an hour after machine stops.
  7. Add any additional chunks of fresh peaches if desired and enjoy!
