During the months of May through September, you can enjoy the delicious taste of fresh peaches that just can’t be matched. Aside from their wonderful flavor, peaches also offer a number of health benefits! Peaches can help to regulate blood sugar levels and have valuable antioxidant properties to keep you strong and healthy when exploring your days under the sun! There are a number of places you can get fresh peaches, most notably Georgia, but proximity to certain states such as California, South Carolina, or New Jersey may increase your chances of getting the freshest peaches possible this summer. They can be prepared a number of ways such as making peach preserves, peaches and cream, or the classic peach cobbler. Whatever way you decided to prepare them, don’t forget to enjoy the sweetness that peaches bring to the warm summer months!

Just like peaches, blueberries are another staple fruit that summer brings to the table (literally). Did you know that blueberries are one of only three berries native to North America? The other berries are cranberries and Concord grapes, all delicious fruit to enjoy in the summer months! Blueberries also have a ton of health benefits, just like peaches, such as high levels of fiber, vitamins and minerals, and help to reduce and regulate blood pressure! Blueberries are grown all of the United States, making access to fresh berries much easier! The best states to source blueberries from include Washington, Georgia, Oregon, and New Jersey. They can be used in a number of different recipes, from muffins to pie to wine! Sit back, relax, and enjoy the sweet delicate flavors that blueberries offer this summer! 


Getting the freshest ingredients possible is what is going to make this recipe so spectacular. How to Make this Sweet Treat

For this recipe, you won’t need much! Feel free to experiment and add your own twist, it may even become a new summer tradition for you and your family!

Ingredients

  • 1 refrigerated pie crust 
  • 6 ounces cream cheese, room temperature
  • 1 teaspoon grated lemon zest, plus 2 tablespoons fresh juice
  • ½  cup granulated sugar
  • ⅔ cup heavy cream
  • 3 peaches (1 pound)
  • 1 cup fresh blueberries
  • Mint leaves, for serving

Directions

Step 1

Mold pie crust evenly into a 9-inch circle pie dish. 

Step 2

Bake the crust until golden brown and set aside for 7-9 minutes to let it cool completely. The crust can be kept at room temperature, wrapped in plastic, for up to 3 days. 

Step 3

Beat together cream cheese, lemon zest, 1 Tablespoon lemon juice, and ¼ cup granulated sugar on medium-high speed until creamy. With the mixer running, slowly add cream and beat until light and fluffy, (1 to 2 minutes). This should make about 2 cups of the mixture. Spread into the crust and refrigerate for 1-2 hours. 

Step 4

Meanwhile, using a vegetable peeler, peel peaches (if desired); cut into ½-inch-thick wedges. Transfer sliced peaches into a bowl and stir in blueberries, the remaining ¼ c granulated sugar, 1 Tablespoon lemon juice, and ¼ teaspoon salt.

Step 5

Just before serving, spoon macerated fruit over the tart and drizzle with remaining juice from the bowl. Sprinkle with mint and serve with any remaining fruit on the side.
